MITTY LENE''s CORNBREAD
1 pint cornmeal         3/4 teaspoon soda
1 teaspoon salt          1 egg
3/4 pint buttermilk      1 large spoon bacon grease
                                     (or shortening)
 
Mix cornmeal with milk, egg, salt and dissolved soda. Then, add melted bacon grease to mixture. Pour it all into a well-greased black iron skillet and bake in a hot oven til golden brown. About 350-400 degrees for 35-40 minutes.
 
    If you want cranklin bread, add a fistful of cracklins. It's real cracklin good !
 
    Now, if you want cornbread that's extra crusty, just heat your well-greased skillet on top of the stove until it's sizzlin' hot. Then pour in the batter and pop it into the oven.
 GRANDMA CRUM's
FRIED OKRA
1 lb of fresh okra
1 1/2 cups cornmeal or cracker meal
salt, pepper (heavy salt)
 
Salt and pepper okra, then shake it in a brown paper sack with 1 1/2 cups of meal til okra is covered. Heat skillet very hot with 1/3 cup of oil. Put in okra and fry to golden brown (12 minutes or thereabout). Remove from skillet and lay okra on paper towel to absorb oil. Serve hot. Enough for 4.
